Irish colcannon with spinach

This is a slight variation of a classic Irish potato dish where I have just changed out green cabbage and used spinach instead. It looks and tastes great, and makes standard mashed potatoes a little more fun! Enjoy!

  • 750 g potatoes
  • 4 tbsp margarine
  • 3 tbsp oat milk or soy milk
  • 3 spring onions
  • 70 g spinach, fresh
  • salt
  • black pepper
  1. Peel the potatoes if desired, chop and cook them in salted water.
  2. Finely slice the spring onions and wash the spinach.
  3. Strain the cooked potatoes and let them steam off for a few minutes. Mash them with the margarine and milk and season with lots of salt and pepper.
  4. Finally stir in the spinach and spring onions and leave with the lid on for a few minutes for the spinach to wilt. Stir again and serve.
