Fennel orange salad

This fennel orange salad is so fresh, crunchy and looks great. I love the intense flavour combinations and I hope you will too! Enjoy!

  • 1 fennel
  • 1 tsp sugar
  • 2 tbsp lemons pressed
  • 2 tbsp olive oil
  • 1 orange
  • 1 tbsp mint, fresh chopped
  1. Cut the fennel in quarters, wash to remove any dirt, then cut away the root. Finely slice the fennel as thin as you can.
  2. In a big bowl, blend the sugar, lemon juice and the oil. Stir in the sliced fennel.
  3. Cut off the skin of the orange, then carefully slice out the orange segments. Add them to the fennel, then squeeze over the remaining juice from the remains of the orange.
  4. Add the chopped mint and gently stir. Let stand 10 – 15 minutes before serving.
