Fennel gratin

This cute individual fennel gratin looks great and tastes amazing. The simple flavours are wonderful together, and I am sure you will agree, this is so good, you will make it again! Enjoy!

  • 1 fennel large
  • 1 onion medium sized, peeled
  • 3/4 tsp fennel seeds
  • 2 garlic cloves
  • 2 1/2 dl oat cream or soy cream
  • 2 slices good bread
  • 3 tbsp olive oil
  1. Cut the fennel in half down through the root, then in half again. Slice out the root and wash the fennel well.
  2. Thinly slice the onion and fennel (even the green tops). In a big bowl, thoroughly blend the vegetables with the fennel seeds, and then evenly distribute in the 4 oven proof dishes.
  3. Pour the oat or soy cream in a bowl. Add the crushed garlic and season well with salt and pepper, then evenly pour it on the fennel and onions.
  4. Put the bread in a food processor, add a pinch of salt and the oil, and pulse until you have a chunky breadcrumb mix. Evenly spread this over the gratin dishes.
  5. Bake at 190°c for 15 minutes until the topping is golden brown. Serve!
