Almond and orange tabbouleh

There are many many ways to do a tasty Tabbouleh. In this, I love the combination of citrus, almonds and mint, and I hope you will too! Smaklig måltid!

Ingredients
  • 1 dl bulgur (quinoa to make gluten free)
  • 1 tomato
  • 1/2 onions
  • 3 dl parsley, fresh chopped
  • 1/2 dl mint, fresh chopped
  • 4 tbsp olive oil extra virgin
  • 1/2 dl almonds
  • 1 orange
  • 1/2 lemons

Instructions
  1. Cook the bulgur according to the instructions on the packet, then let cool.
  2. Finely chop the tomato and onion then combine with the parsley, mint, oil and bulgur. Season well with salt and pepper.
  3. Zest 1/4 of both the orange and lemon and roughly chop the almonds.
  4. Peel and filé the orange into segments then squeeze the remaining juice over the Tabbouleh.
  5. Finally stir in the zests, chopped almonds, chopped orange segments, and the juice from the ½ lemon. Let stand 1 hr before serving.
